Zucchini Baking Recipes

It always seems like if you plant even one zucchini plant, you have enough zucchini to feed a very large family plus the neighbors. So, of course, there is then the question of what to do with all of that zucchini. It always amazes me that zucchini can taste so good in baked goods. Hope you enjoy these two baking recipes for zucchini!

Zucchini Granola Cookies

3/4 cup butter or margarine (softened)
1 1/2 cups brown sugar
1 egg
1 teaspoon vanilla
grated rind of 1 orange
3 cups grated, unpeeled zucchini
3 to 3 1/2 cups flour
1 teaspoon baking soda
1 cup butterscotch or chocolate chips
3 cups granola cereal

In a large bowl, mix together the butter and sugar. Mix in the egg, vanilla, orange rind, and zucchini. Add in the flour and baking soda. Mix in the granola cereal. Then mix in the butterscotch or chocolate chips. Grease a cookie sheet and put teaspoonfuls of the dough onto the sheet. Bake in a 350 degree oven for 12 to 15 minutes.

Chocolate Zucchini Bread

1 cup brown sugar
1 cup sugar
1/2 cup margarine
1/2 cup oil
3 eggs
1 teaspoon vanilla
3/4 cup buttermilk
3 cups flour
1 teaspoon cinnamon
1/2 teaspoon salt
2 1/4 teaspoons baking soda
5 tablespoons cocoa
2 1/2 cups grated zucchini
1/2 cup milk chocolate chips
1/2 cup raisins
1/2 cup chopped nuts (optional)

In a large bowl, mix the sugars, oil, and margarine together. Add the egg into the mixture one at a time. Mix in the buttermilk and vanilla. In a small bowl, sift together the flour, cinnamon, salt, baking soda, and cocoa. Add in the zucchini and dry mixture by alternating. Add in the chocolate chips, raisins, and nuts. Grease a 9x13-inch pan and pour the batter into it. Bake in a 350 degree oven for 1 hour.

White Craft Foam

White Acrylic Paint and Brush Instructions for the project: Paint Styrofoam egg white and let dry completely. Cut two ears out of the craft foam. Make a small slit in the sides of the lambs head (the Styrofoam egg). Put a dab of glue on the ears and gently push the ends into the slits. Tear apart some cotton balls and glue to the head of the lamb. Tie the ribbon into a bow and glue to the lambs head. Carefully glue the cotton balls all around your container covering it completely. After the basket is dry you can glue the egg to the side near the top to make a head. Cut a 1" strip of craft foam and glue the ends to the sides to make a handle for your basket.

Paper Mache or small wooden treasure box (available at most craft stores)
Paints in a variety of Easter colors

How Did Kids' Easter Baskets Begin?

At first glance, many easter gift">easter traditions seem to have little to do with Christianity. I mean, what on earth do eggs, bunnies and baskets have to do with the most important day of the Christian calendar anyway?

But let's look at it another way. easter gift">easter occurs in Springtime, and after a long, cold winter, many cultures in the northern hemisphere have celebrated this time of year for millennia. Long before Christianity, many rituals and legends had taken root, and one of them in particular was based around the fertility goddess Eostre. Myths surrounding her vary from place to place, but she is often depicted surrounded by light and animals. One of the most prominent creatures, who in some legends actually carries her light, is the hare. Perhaps this is not surprising, as they are such prolific breeders, and a perfect symbol for Spring. They also make little hollows in the ground, rather than burrowing like rabbits do, and these were often confused with the ground nests of some birds. No wonder the idea of an egg-laying hare came about!

Ironically, as Europe increasingly turned to Christianity, churches unwittingly propagated some of this folklore. Devout Christians would forgo many items during Lent, the 40 days leading up to Easter, and one item was eggs. To preserve the eggs that were laid, they were often hard-boiled, and over time, a tradition of coloring and decorating them grew popular.

By the time German settlers arrived in America during the early 18th Century, most of these traditions, both old and new, had come together in new forms. Children started making their own 'hare nests' out of bonnets, hats and straw. If they were good, the Easter hare would leave colored eggs in these nests during the night.

The new traditions caught on over time, and evolved: nests became baskets; hares became the Easter Bunny; eggs were replaced by chocolate and plastic replicas. In fact, nowadays, any small gift can be included in your kids' Easter baskets!

So hopefully that explains where kids' Easter baskets came from. It's not as bizarre a tradition as some may think!

Tie off the wrapped basket with ribbon. Wired fabric ribbon is best if you have it. For bows: You can use pre-packaged bows but making your own bows is easy and the best if you can do it. Use a large or huge bow.

Assemble all your gift basket items, tools you need, etc. Now line your selected gift container. Now stuff the selected filler into the gift basket to give added height to your items. Place, layer and arrange your selected items on the filler in the gift container. Put the larger items in the back, the smaller items in front.

Fill in the holes or prop up with more filler (shredded paper, easter gift">easter basket grass, wrapped chocolates, napkins or holiday napkins etc. Also you can use 'picks' of artificial flowers to fill in space.

Place your cellophane or other wrap under the gift basket. Center the gift basket on the wrap. Bring the cellophane or other wrap over the top of the gift basket and tie it with ribbon and or a beautiful bow! Use ribbon and bows to match your theme colors. Tuck a card in the ribbon and that's it!

You can find fabric or wired ribbon cheaply at Costco-- especially in the fall prior to Christmas but often throughout the year in some stores. You can shred paper in a paper shredder. If you're going to need a lot of cellophane you can purchase it wholesale through the packaging specialty stores throughout the U.S. but should be easily found in craft stores.
